POOR MAN'S SUPPER 
3-4 medium potatoes (peeled and cubed)
1 medium onion
1/2 pkg of bacon
2 pieces of bread (toasted and grated into crumbs)
1 cup flour
1 egg
enough water to form dough
pinch of salt
1 Tbsp. butter or oil *optional*

Mix flour, salt, egg and enough water to form stiff dough. Take a small piece of dough and roll into s long strip about 6 inches long. Continue until all dough is used. Set aside.

In fry pan, cook bacon and onions until bacon is crisp and onions are transparent. When done, add toast crumbs to soak up extra drippings.

Fill a large pot with water and bring to a boil. Add potatoes. Bring back to boil and take dough strips and cut (with scissors) into cubes and drop into potato water. This makes little dumplings. Lower heat to a slow boil.

When potatoes are done, so are the dumplings. Strain potatoes and dumplings and replace into pot. Add bacon fry mixture. Toss all together. Add a tablespoon of butter or oil, if desired. Serve Hot.

Very tasty meal and quite filling. Immigrants used to make this when they were low on ingredients to keep them warm and satisfied in cold winter months.

My father made a similar German recipe called Kenetchen (not sure of the spelling). He said it was what his family made because they were poor. He added cottage cheese to the dumplings & bacon. It made enough to feed a small army but never lasted, it was delicious!

This is a tasty recipe but the cooking instructions need some tweaking.

I would first get the potatoes and onions chopped. Let the potatoes set in some cold water while you make up the dough. Then I would get the pot of water going. Then start the bacon and onions in a separate pan. By then the water should be boiling to add the potatoes and dumplings. Finish the bacon while the potatoes cook. This way your bacon and onions haven't completely cooled and the dough hasn't started getting crusty from sitting aside so long. ALSO, forget rolling the dough into strips and snipping. Save yourself some time and just roll little balls.

Soup is served in its liquid that it is cooked in. This is totally drained of all liquids so how can you call it soup???

Also Called Lazymans Perogies - use Mushroom soup (half the water) with dried dill or just sour cream for a great sauce on top.
