SPINACH QUICHE 
2 pkg. chopped spinach
1 1/2 lb. grated Jack cheese
3 sm. cans whole chilies, chopped, less seeds
1 1/2 c. Bisquick
4 c. milk
5 eggs

Drain spinach well. Mix with chopped chilies. Layer dish with spinach/chili mix, cheese, spinach/chili mix etc. Retain some grated cheese.

Blend eggs, milk, and Bisquick. Pour over cheese and spinach. Sprinkle with remaining cheese. This will make 2 full quiche dishes, or one deep dish casserole. Bake at 325-350 degrees for about 1 1/2 hours.
