ZUCCHINI BREAD II 
3 eggs
1 1/2 c. sugar
3 tsp. vanilla
1 tsp. baking soda
1 1/2 tsp. baking powder
1/2 c. raisins (opt.)
1 c. salad oil
2 c. zucchini, grated
3 c. flour, sifted
3 tsp. cinnamon
1/2 c. walnuts (opt.)

Preheat oven to 325 degrees. Beat eggs. Add oil, sugar, zucchini and vanilla. Mix thoroughly. Sift together dry ingredients and blend thoroughly. Stir in nuts and raisins. Pour into large bread pan, lightly greased or 1 medium bread pan and 1 small bread pan, lightly greased. Bake at 325 degrees for 1 1/3 hours. Small loaf should be baked for about 1 hour. Cool thoroughly before removing from pans.
