BUTTER RICH POUND CAKE 
2 c. sugar
1 c. butter
3 eggs
3-1/4 c. cake flour
1/2 tsp. baking soda
1 c. buttermilk
2 tbsp. lemon peel
2 tbsp. lemon juice

GLAZE:

1/3 c. butter
1/2 tsp. lemon peel
2 c. powdered sugar
2 to 4 tbsp. hot water

Heat oven to 325 degrees. Beat sugar and butter on medium speed until fluffy. Beat in eggs, one at a time. Mix flour and soda, beat into sugar mixture alternating with buttermilk until blended. Stir in lemon peel and juice. Spread in greased and floured tube pan (10 x 4 inch). Bake 1 hour. Cool 20 minutes. Remove from pan, cool completely.

GLAZE: Heat butter in 2-quart saucepan until melted. Stir in lemon peel and sugar. Stir in water, 1 tablespoon at a time, pour over cooled cake.
