BAKED PORK CHOPS 
2 egg yolks
2 tsp. salt
1 tsp. pepper
6 (3/4 to 1 inch) thick pork chops
1 1/2 c. cracker crumbs
4 tbsp. fat
6 slices onion

Beat egg yolks, salt, pepper and 4 tablespoons cold water thoroughly. Dip chops into egg mixture; coat with cracker crumbs. Brown well on both sides in hot fat; place in baking dish. Place onion slice on top of each pork chop; add 1/2 cup hot water. Cover. Bake in 350 degree oven for 45 minutes.
