RICE PUDDING 
1/2 c. sugar
2 eggs
1/2 tsp. salt
2 1/4 c. milk
1 tsp. vanilla
2 c. steamed rice
1/2 c. raisins
Dash nutmeg

Separate eggs, beat yolks, add sugar, salt, milk, vanilla and rice. Stiffly beat egg whites and fold in. Turn into small baking dish, sprinkle with nutmeg. Bake at 350 degrees for 45 minutes or until done. Recipe may be doubled in a 13 x 9 x 2 glass casserole.
