CARROT CAKE 
2 c. flour
1 tsp. cinnamon
1 1/2 c. salad oil
2 c. white sugar
4 eggs
2-3 c. grated carrots
1/4 tsp. walnut extract
1 c. black walnuts

Mix all ingredients together until well blended and smooth batter result. Add carrots last. Pour into greased pan. Bake in 350 degree oven for 1 1/2 hours.
