PINEAPPLE CARROT CAKE | |
1 c.sugar 1/2 c. brown sugar 1 c. salad oil 4 eggs 2 c. carrots, grated 1/2 c. walnuts, broken 1/2 c. whey sugar (may use white) 1 tsp. vanilla 2 tsp. cinnamon 1/2 tsp. salt 2 tsp. baking soda 1 c. crushed pineapple 2 c. whole wheat flour Cream together sugars and oil. Add eggs one at a time. Beat well. Add pineapple and dry ingredients. Beat well. Add carrots, nuts and vanilla. Beat together. Bake in foil-lined 10x13" pan at 350 degrees for 1 hour. Frost with butter cream icing or cream cheese icing, or dust with confectioners sugar. |
