LAYERED SOUTHWESTERN SALAD 
2 tomatoes
1 sm. onion, chopped
1 jalapeno pepper, seeded and chopped
1 c. black beans, rinsed, drained, divided
2 c. Ice berg lettuce, washed and shredded
1/2 green pepper, chopped
1/2 c. corn (canned)

DRESSING:

4 tbsp. fresh lemon juice
6 tbsp. olive oil
3 to 4 garlic cloves, crushed
Salt and pepper to taste

In food processor one tomato, onion, jalapeno, salt and pepper until pureed (taste). Mix together with 1/2 mixture black beans.

In serving bowl place one layer of lettuce, green pepper, 1/2 black bean mix and corn. Slice the second tomato and arrange the slices on top and spoon the remaining black beans onto the tomatoes.

Whisk together the lemon juice, olive oil, garlic, salt and pepper, pour 1/2 of the dressing over the salad serve the rest on the side.
