GERRIE'S MARINATED CHICKEN
DRUMSTICKS WITH GARLIC RICE
 
6 chicken drumsticks (or thighs)
2 tsp. parsley
2 tsp. chives

MARINADE:

juice and rind of a lemon
1 tbsp. paprika
1 tsp. chopped dill (dried is OK)
2 tsp. garlic powder
1/4 cup olive oil

Score chicken pieces and place in large Ziploc bag.

Mix lemon juice, paprika, dill, garlic and oil in a small jar then pour it over the chicken, and massage well. Marinade for at least an hour, or preferably overnight.

Either cook on a hot barbecue plate for 30 minutes or bake in 350°F oven for 30 minutes.

Sprinkle with the remaining herbs and serve on a bed of garlic rice (cooked rice with garlic paste and ground pepper plus a little olive oil, combined).
