CHICKEN CASSEROLE 
4 c. diced chicken
1 1/2 c. broth from stewing chicken
1 1/2 c. diced celery
1 onion, diced
2 eggs
1 can cream of mushroom soup
4 c. Ritz crackers, crumbled
1/2 tsp. pepper
2 tsp. salt

Combine all ingredients except 2 cups of the cracker crumbs. Sprinkle these on top after they have been tossed in a 1/4 cup melted butter.

Spread mixture into a 9x13 pan. Bake at 350 degrees for 45 minutes. Let stand a few minutes before serving.
