PIMIENTO CHEESE 
1 lb. mild Cheddar cheese
1 (4 oz.) jar diced pimentos
1/2 c. granulated sugar
2-2 1/2 tbsp. vinegar
1/2 c. Miracle Whip salad dressing
Pinch of salt

Grate cheese. Mash pimentos. Put in medium size bowl. Add salt, sugar, vinegar and salad dressing. Mix thoroughly. Add more salad dressing, if needed, to make a good spreading consistency. Best if refrigerated overnight before using. Keeps well in closed container in refrigerator 2-3 weeks. Makes 12-15 sandwiches.
