LEMON BASIL GRILLED CHICKEN | |
1/2 c. Puritan oil 1/4 c. lemon juice 2 tbsp. white wine vinegar 1 tsp. grated lemon peel 1 tbsp. dried basil 2 cloves garlic, minced 1/2 tsp. salt 1/4 tsp. freshly ground pepper 4 boneless, skinless chicken breast halves (about 1 lb.) Combine Puritan oil and next 7 ingredients in shallow baking dish. Add chicken, turning once to coat both sides. Refrigerate for 30 to 45 minutes, turning once. Prepare charcoal for grilling, or heat broiler. Grill or broil chicken 4 inches from heat, turning once, 3 to 5 minutes per side or until completely cooked through. 4 servings. An easy make-over: Always remove skin from poultry before or after cooking. It's where most of the fat is. |
