ERWTEN SOEP (PEA SOUP) 
1 lb. green peas, whole or split
1 med. sized pig hock
3 med. sized onions
3 qts. water
Salt and pepper to taste
1 tsp. sugar

Soak peas in cold water overnight, or from 2 to 3hours, if using whole peas. For split peas, wash and put on stove with cold water. When boiling, add pig hock. Cut up onions and add. Keep at a continually slow boil from 2 to 3 hours. Add salt, pepper and sugar last 1/2 hour. Stir occasionally.
