SQUASH CASSEROLE 
1 lb. squash, sliced
1/4 stick butter
Salt and pepper t taste
1 green pepper, chopped
1 c. grated cheese
1 beaten egg
8 Ritz crackers, crushed
1 med. onion, chopped

Boil squash, onions, pepper until tender. Drain. Add cheese, butter, egg and part of crackers. Mix together, add salt and pepper. Pour in casserole dish and top with remaining crackers. Bake at 350 degrees until set and brown.
