BEEF ENCHILADA | |
1 lb. ground beef 1 onion 1 lg. can tomato sauce 1 lg. can stewed tomatoes 1 lg. can chili 1 tbsp. chili powder (more if desired) 1 tsp. salt 1 pkg. tortilla shells 1 pkg. Cheddar cheese 1 pkg. Mozzarella cheese In large skillet, cook ground beef. Pour off excess water. Chop onion into meat. Add tomato sauce, stewed tomatoes, and chili. Add chili powder and salt; stir well. Let ingredients cook on medium heat for 10 minutes. Fill individual shells with mixture and place in long baking pan. Sprinkle with cheeses and cook until cheese is melted. Bake at 350 degrees. |
