COCONUT PIE 
1 c. + 2 tbsp. sugar
3 tbsp. flour
2 1/2 c. milk
3 eggs, separated
1 tsp. butter
1 1/2 tsp. vanilla
1 can flaked coconut
2 baked pie shells

Sift 1 cup sugar and flour together. Add to milk. Beat egg yolks and add. Cook until mixture begins to thicken. Add butter and 1 teaspoon vanilla and coconut. Keep out enough coconut to sprinkle on top. Cook until thick. Pour into pie crust. Beat egg whites until thick. Add remaining sugar and vanilla. Beat until stiff. Add to pie. Sprinkle top with remaining coconut. Bake at 305 degrees until brown.
