SUGAR PLUM CAKE | |
1 1/2 sticks of butter 1 3/4 c. sugar 4 eggs 4 c. flour 3/4 lb. of orange sliced candy, cut into pieces. 1 1/2 c. chopped pecans 1/2 lb. chopped dates 3 1/2 oz. can flaked coconut 1 tsp. baking soda 1 c. buttermilk 1 tbsp. lemon juice 2 tsp. grated orange rind GLAZE: 2 c. powdered sugar 1 c. orange juice 2 tsp. grated orange rind Cream butter and sugar together. Beat in eggs one at a time. Sift 1/2 of flour over Orange Slice candy, pecans and dates. Sift remaining flour with baking soda and add alternately with buttermilk to creamed mixture. Stir in flavorings. Add dredged candy and fruit. Fill greased and floured loaf pans (2) 9 x 5. Bake in preheated oven at 300 degrees for 1 1/2 hours. Test at 1 hour 15 minutes. Remove cake from oven and let rest few minutes before pricking with skewer. Combine glaze ingredients and spoon over hot surface of cake. This cake will brighten your holiday season. |
