SUGAR PLUM CAKE | |
1 c. (2 sticks) butter 2 c. sugar 4 eggs 4 c. (plain) flour Dash of salt 1/2 c. buttermilk 1 tsp. baking soda 1 tbsp. lemon juice 1 tsp. orange extract 1 pkg. dates, chopped 1 lb. candy orange slices 1 can coconut 1 c. pecans, chopped Dredge dates, nuts, orange slices (cut in pieces) and coconut in 1 cup flour. Cream butter and sugar. Add eggs; mix well. Sift other 3 cups flour with soda and salt. Add to butter mixture, lemon juice and orange extract and buttermilk alternately with flour. By hand stir in dates, orange slices. Batter will be stiff. Grease and flour 3 loaf pans or 10 inch tube pans. Bake at 250 degrees for 2 1/2 hours. Remove from oven. Pour over cake, 1 cup orange juice, 2 tablespoons orange rind (grated) and 2 cups powdered sugar. |
