MEXICAN CORNBREAD CASSEROLE 
2 pkgs. Mexican corn bread mix
2 eggs
1 tsp. baking soda
2 cans cream style corn
1 jalapeno pepper, dressed and chopped
2 c. milk
1/2 c. oil
1 1/2 lb. ground beef, cooked with 1 lg. onion
10 oz. grated cheddar cheese

Mix corn bread mix with eggs, milk, soda, oil and corn; set aside. Brown meat with onions and pepper. Pour 1/2 corn bread into 9 x 12 inch pan. Over this, sprinkle 1/2 the cheese. Add the meat and onion mixture. Add rest of cheese. Top with rest of corn bread mixture. Bake at 350 degrees for 1 hour or until brown.
