FILLET OF SOLE IN LEMON PARSLEY
BUTTER
 
1/2 c. butter
2 tbsp. flour
2 tsp. lemon juice
1 tbsp. fresh parsley
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. celery seed
1 lb. sole or flounder fillets, fresh or frozen, thawed

Place butter in rectangular baking dish 12 x 8 inches. Microwave at high until melted. Blend in remaining ingredients except fish fillets. Coat both sides of fish fillets with the butter sauce. Arrange in baking dish. Cover with waxed paper. Microwave on high 5 to 6 minutes until fish flakes easily with a fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
