CHERRY COBBLER | |
1 c. sugar 1/4 tsp. salt 3 tbsp. cornstarch 1/2 c. water 1 c. cherry juice 1/2 tsp. grated lemon rind 1/4 tsp. almond extract 2 c. drained red sour pitted cherries 2 tbsp. lemon juice Mix sugar, salt, and cornstarch. Add remaining ingredients; blend. Cook, stirring constantly, until thick. Pour into oblong baking dish, 9 1/2 x 5 1/4 x 2 3/4 inches. Top with ready to bake refrigerator biscuits or you own favorite biscuit topping recipe. Bake in preheated 400 degree oven until topping is brown and done, about 30 minutes. Serve with whipped cream. |
