INDIVIDUAL CHEESECAKES 
2 (8 oz.) pkg. cream cheese, softened
2 eggs
1 tsp. vanilla
3/4 c. sugar
24 vanilla wafers
1 lg. can pie filling (ex. cherry, or blueberry)

Line muffin tins with cupcake papers. Place 1 vanilla wafer in bottom of each paper. Mix together remaining ingredients, except pie filling and pour over wafers filling 2/3 full. Bake 15 to 17 minutes at 350 degrees. Do not overbake. Let cool, then top with fruit from pie filling. Refrigerate.
