STUFFED BAKED POTATOES 
1 lg. bake potato
2 tbsp. skim milk
4 tbsp. cottage cheese, 1%
1/2 c. chopped, cooked broccoli or spinach

Scoop out potato without tearing the skin. Mash the potato and seasoning of garlic, salt, pepper, and Parmesan cheese. Mix it well with the milk and cottage cheese and broccoli and spoon into the skins. Bake uncovered for 20 minutes 350 degrees.
