APPLE CAKE 
4 c. chopped apples
1 1/2 to 2 c. sugar
2 c. cake flour
2 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
2 tsp. vanilla
3/4 c. salad oil
1/2 c. chopped nuts

Put apples and sugar in bowl, stir to cover apples. Let stand while you sift 2 cups cake flour, 2 teaspoons cinnamon, 1 1/2 teaspoons baking soda, and 1 teaspoon salt. Beat eggs, vanilla, and oil. Combine all ingredients and stir well. Add nuts. Put some nuts on top of cake. Bake at 350 degrees for about 50-60 minutes.
