GRAHAM CRACKERS 
2 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 c. light brown sugar
1/4 c. milk
1 c. enriched flour
1/4 tsp. salt
1/2 c. shortening
1 tsp. vanilla

Replace 1/2 cup honey and 1/4 cup brown sugar for the 3/4 cup brown sugar, if desired.

Stir together flour, baking powder, baking soda and salt. Cream shortening and sugar until fluffy. Add vanilla and add flour mixture alternately with the milk, mixing well after each addition. Chill dough until firm, several hours or overnight.

Divide dough in thirds. Roll out each portion to 1/8 inch thick. Cut rectangles. Place on greased baking sheets, bake at 350 degrees for 10-12 minutes. Remove immediately and cool on wire rack.
