LOBSTER STUFFED TENDERLOIN OF
BEEF
 
3-4 lb. whole tenderloin of beef
2 (4 oz.) frozen lobster tail
1 tsp. melted butter
1 1/2 tsp. lemon juice
6 slices bacon, partly cooked
1/2 c. green onion
1/2 c. dry white wine
1/8 tsp. garlic

Cut tenderloin lengthwise to within 1/2" of bottom. Place frozen lobster in boiling water. Simmer for 5 minutes. Remove from shells. Cut in 1/2, place lobster end to end inside beef, combine melted butter and lemon juice and drizzle on lobster. Close meat around lobster and roast on rack at 425 degrees for 30 minutes. Place bacon on top and roast 5 minutes longer. Saute onion in butter, add wine, garlic, salt and heat. Slice roast (table side), spoon on sauces. Can be stuffed ahead of time and refrigerated. Serves 8. Elegant for dinner parties.
