CLASSIC PEANUT BUTTER COOKIES 
2 1/2 c. all-purpose flour
1 1/2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 c. butter
1 c. peanut butter
1 c. firmly packed brown sugar
1 1/3 c. granulated sugar, divided
2 eggs
1 tsp. vanilla

Preheat oven to 375 degrees. In medium bowl combine flour, baking soda, baking powder and salt. In large mixing bowl, cream butter, peanut butter, brown sugar and 1 cup granulated sugar until light and fluffy. Beat in eggs and vanilla. Gradually beat in dry ingredients just until combined.

Shape tablespoon of dough into 1 inch balls and roll in remaining sugar. Place on ungreased cookie sheet. Flatten in a criss-cross pattern with tines of a fork coated with sugar. Bake 8-10 minutes until golden brown. Makes 6 dozen.
