CHILI CON CARNE | |
Serves 24 - 1 1/3 cup each. 4 lbs. ground beef 8 med. onions 4 (1 lb., 12 oz. size) cans tomatoes 4 (15 1/2 oz. each) cans kidney beans, drained 1 (15 oz.) can tomato sauce 2 tbsp. sugar 3 tbsp. chili powder 1 tbsp. salt plus 1 1/2 tsp. Cook and stir ground beef and onions in Dutch oven or large roasting pan until meat is brown and onion tender. Drain off fat. Stir in tomatoes, tomato sauce and seasonings. Heat to boiling. Reduce heat, simmer uncovered 1 1/4 hours, stir in beans. Simmer, stirring occasionally for 15 minutes. Serve. |
