MOM'S CRAB CAKES | |
1 lb. white crab meat 2 eggs 1 tsp. parsley 1/2 tsp. salt 1/4 tsp. dry mustard 1 5sp. onion juice 1/4 tsp. Worcestershire sauce 2 pieces of bread (for crumbs, use blender) WHITE SAUCE: 1 1/2 tbsp. flour 1 tbsp. Crisco shortening 1 c. milk 1/2 tsp. salt Heat Crisco; remove from stove. Add flour, salt, mix until smooth; add small portions of milk until all is added and mixture remains smooth. Return to heat. Boil for one minute. Add crab meat, beaten eggs and spices. Roll into bread and form cakes. May need extra dried bread crumbs for outer coating. Fry in hot oil; pat dry and warm in oven until serving. |
