MOCK MACAROONS 
1 1/2 c. buttermilk biscuit mix (Jiffy or Gooches Best)
1 c. sugar
1/2 c. butter, melted
1 1/4 c. potato buds
1 egg
1 tsp. coconut extract

Mix the first 3 ingredients. Melt shortening, beat egg with flavoring. Mix with the dry ingredients until blended. Let stand in refrigerator for 1 hour or longer. Cover tightly. Shape into balls the size of a marble. Place on ungreased cookie sheet. Bake at 350 degrees until edge is brown, cool slightly before removing from pan.
