EGGPLANT WITH MISO SAUCE 
4-5 Japanese eggplant, slice 1 inch thick
2 tbsp. miso
2 tbsp. sake
2 tbsp. olive oil or peanut oil
1 tbsp. soy sauce
1 tbsp. sugar

Mix miso, soy sauce, sake and sugar in bowl. Heat frying pan with oil and fry eggplant. Add miso mixture just before taking out of pan.

(Optional) Add sliced satsumage or chopped shrimp into eggplant while frying.

This was yummy. I substituted apple juice for sake and added some nuts. Turned out well.
