EGGPLANT WITH TOMATO SAUCE 
1 med. eggplant, cubed
1 sm. chopped onion
1 stalk celery
2 tbsp. oil
1 sm. can tomato sauce
Salt & pepper

Saute onions and celery in oil until brown. Add tomato sauce and simmer for about 5 minutes. Then gradually add cubed eggplant to mixture. You may have to add 1/2 cup water. Cover and simmer until eggplant is soft.
