NEW ORLEANS BREAD PUDDING 
3 lg. eggs
1 1/4 c. sugar
1 1/2 tsp. vanilla
1 1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
1/4 c. unsalted butter
2 c. milk
1/2 c. raisins
5 c. Old French or Italian bread with crust on

In large bowl, beat eggs on high speed 3 minutes. Add sugar, vanilla, spices, butter until well blended. Beat in milk, then stir in raisins. Place bread cubes in greased loaf pan. Pour egg mixture, toss until bread is soaked. Let stand until liquid is absorbed, patting bread down. Place in preheated 350 degree oven. Immediately lower to 300 degrees. Bake 40 minutes, increase to 425 degrees until brown and puffy, about 15 to 30 minutes more. Enjoy.
