ZUCCHINI HOT DISH 
3 med. zucchini squash, thinly sliced
1 lg. onion, chopped
1 1/2 lb. ground beef, browned
1/2 tsp. salt
1/8 tsp. pepper
6 oz. pkg. stuffing mix
1 c. grated carrots
1 can cream of chicken soup
1 c. sour cream

Cook zucchini and onion in small amount of boiling water for 5 minutes. Drain. Prepare stuffing by package directions. Spread one-half of meat in greased casserole. Top with one half stuffing. Combine carrots, soup and cream. Fold in squash. Pour over stuffing. Add remaining meat. Top with stuffing mix. Bake 45-50 minutes at 350 degrees.
