ZUCCHINI HOT DISH 
3-4 c. zucchini, thinly sliced
1 lg. onion, chopped
1 1/2 lb. lean ground beef
1/2 tsp. salt
1/8 tsp. pepper
1 (6 oz.) pkg. stuffing mix
1 c. grated carrots
1 can cream of chicken soup
1 c. sour cream, dairy

Grease 2 quart casserole dish. Preheat oven to 350 degrees. Cook zucchini and onion in a small amount of salt water for about 5 minutes until tender. Drain and set aside. Brown ground beef. Season with salt and pepper. Prepare stuffing mix according to package directions. Spread half of meat in casserole dish. Top with half of stuffing mix. Combine carrots, soup, and sour cream. Fold zucchini and onion into the mixture. Pour over stuffing layer and add remaining meat. Top with remaining stuffing. Bake 45-50 minutes.
