ZUCCHINI HOT DISH 
4 c. zucchini, grated
1 lg. onion, chopped
1 1/2 lb. hamburger
1/2 tsp. salt
1/8 tsp. pepper
1 (6 oz.) pkg. Stove Top stuffing for chicken
1 c. carrots, grated
1 can cream of chicken soup
1 c. sour cream

Grease large casserole, cook zucchini and onion in small amount of water 2 to 3 minutes; drain. Brown meat with salt and pepper. Mix stuffing according to directions. Spread 1/2 of meat in bottom of casserole; the 1/2 of stuffing. Combine carrots, soup and sour cream. Fold in zucchini and onion. Pour mixture over stuffing add remaining meat and top with remaining stuffing. Bake 40 to 50 minutes at 350 degrees.
