NO-BAKE PEANUT BUTTER OATMEAL
COOKIES
 
2 c. sugar
1 stick butter
1/2 c. milk
1 tsp. vanilla
2 c. oatmeal
1/2 c. peanut butter

Mix sugar, milk and butter in a medium cooker. Bring to a boil and allow to boil for three minutes and remove from stove. Next add vanilla and the peanut butter and stir well. Last, add oatmeal a little at a time to desired taste and thickness. Drop by spoonfuls onto wax paper, or pour into a buttered pan and cut into squares after it cools.

Changed the sugar amount due to previous reviews.
I used 1/2 cup sugar and 12 packets of Stevia in the Raw. Everything else I followed the directions. LOVE THESE! Next time I'll try even less sugar and more Stevia (for my diabetic family & friends).

if you want a little different taste change the vanilla for maple flavor. Use the same amount

I cut the sugar in half and used pure cane organic sugar instead. I also added an extra cup of oats, about 1/4 cup chocolate chips, and used creamy organic peanut butter. I sprinkled a few chocolate chips on top to make them pretty as well. These cookies came out delicious! I was trying to refrain from eating them straight from the pot!

Heeded the advice of other comments. Only used one cup of sugar and the recipe turned out fantastic. I also used crunchy peanut butter instead of smooth, and it gave the cookie even more texture and "CRUNCH". Loved that I could let them cool and cut later.

Used a little less sugar and the cookies were way too sweet. It needs some salt to balance out the sweetness. If I can perfect the recipe I love the fact that I'm able to pour the mix and let it cool to cut later.. peanut oatmeal bars.
