PINEAPPLE-COCONUT-WALNUT CAKE | |
2 c. flour 2 c. sugar 2 tsp. baking soda 2 eggs 1 c. coconut, shredded 1 c. walnuts or pecans, chopped 1 (20 oz.) can crushed pineapple with juice Mix all ingredients together. Grease, but do not flour 9"x13" pan. Bake at 350 degrees for 45 minutes. Frost with Cream Cheese Icing. CREAM CHEESE ICING: 1/4 lb. butter 1 1/2 c. powdered sugar 2 tsp. vanilla 1 (8 oz.) pkg. cream cheese Combine all ingredients; mix well until creamy. Spread on cooled cake. |
