GARLIC DIJON VINAIGRETTE 
1 c. Safflower oil (or Canola oil)
1/2 c. water
1/2 c. white vinegar
2 tbsp. Dijon mustard
8 cloves garlic, minced
Dash cayenne

Blend together all ingredients in blender or food processor. Store in refrigerator. Makes 2 cups. For Mexican flavor, add fresh cilantro, salsa, cumin and chili powder. For Italian flavor, add chopped fresh oregano, chives and parsley.
