MARYLAND CRAB-CORN STEW | |
1 med. onion, chopped 2 c. potatoes, diced and peeled 2 c. water 1/2 tsp. dried oregano 1/2 tsp. salt 1/8 tsp. white pepper 12 oz. reg. crab meat 1 c. whole kernel corn 1 lg. tomato, peeled and chopped 1 med. size green pepper, chopped 1 1/2 c. half and half Put onions, potatoes, water, oregano, salt and pepper in a large kettle. Bring to boil, lower heat and cook slowly covered for 25 minutes or until potatoes are tender. Mix in crab meat, corn, tomatoes, green peppers. Continue cooking 5 minutes. Add half and half. Leave on low heat long enough to heat through. Serve at once or refrigerate one to two days, reheat over low heat. Do not boil. Serve with warm rolls or garlic bread. |
