SAUSAGE CASSEROLE 
1 lb. bulk sausage
1 lg. onion
1 sm. bunch celery
1 green pepper
2 pkg. noodle soup mix (Wyler's or Lipton)
6 c. boiling water
1/2 c. chopped almonds (optional)
1 sm. can mushrooms
1 c. rice (not instant)

Brown sausage, remove from pan. Pour off excess grease. In small amount of grease remaining, brown chopped onion, chopped green pepper, and chopped celery. Add boiling water and soup mix and simmer 5 minutes. Add rice, sausage, nuts, and mushrooms. Place in covered baking dish and bake in 350 degrees for 2 hours. Serve hot. Use large pans. Serves 18.
