"THE BEST" CARROT CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 c. walnuts
1 tsp. salt
1 1/2 to 2 c. carrots
5 eggs
1 tsp. vanilla
1 1/2 c. oil
1 c. crushed pineapples
1 c. coconut

Mix all wet ingredients together. Mix all dry ingredients together. Then combine. Bake at 350 degrees for 1 hour and 10 minutes.

Cream Cheese Frosting:
2 lg. cream cheese (room temperature)
1 c. confectioner's sugar
1 egg
1 tbsp. vanilla

Cream cheese and sugar together with egg and then add vanilla.
