BARBECUED CORNISH HENS | |
1 env. Italian salad dressing 1/4c. red or white wine vinegar 2 tbsp. water 2/3 c. salad oil 2 tbsp. Dijon style mustard 2 cornish hens (1 to 1 1/4 lb.), split or if wanted left whole (Marinate in a deep bowl and wrap in foil before grilling and cook 1 to 1 1/2 hours - taking hens out of foil onto rack last 15-20 minutes). Prepare salad dressing with vinegar, water, oil, as directed on envelope. Add mustard and shake well. Place hens in shallow dish - if split - see above; if whole, put in marinade and marinate 1 hour, turning over once. Place hens on grill over glowing coals or in regular grill, gas grill medium high. Turn and brush frequently. Also can put whole on a spit. Grill 30-35 minutes for split - 1 hour or until done if whole. |
