CORNISH HENS 
2 fresh or frozen Cornish Hens
1 c. Italian dressing
Salt and pepper to taste
1 stick (1/2 cup) butter
1 onion
1 c. water

Wash and remove insides of hens, place breast side up in glass or aluminum pan. Salt and pepper to taste. Cut up onion over hens and place some inside to help make tender. Cut butter in pats and place all over hens and inside, pour Italian dressing over hens and pour water in dish also to help keep from drying out. Bake in 350 degree oven 1 hour 15 minutes or until hens are done and still tender. Cover with aluminum foil for first hour then uncover so they can brown.
