GLAZED ROCK CORNISH HENS AND
APPLE STUFFING
 
2 cornish hens
1/4 c. butter
1 tsp. salt
1 tsp. pepper
1 tsp. paprika
1 c. celery
2 apples
1 1/2 c. cook wild rice
1 can apple juice
2 tbsp. cornstarch

1. Preheat oven to 325 degrees. Remove giblets and necks from hens; rinse and drain hens. Cook giblet with hens and use in stuffing. Cook hens breast side up in roasting pan. Roast hens brushing occasionally with melted butter for 35 minutes.

2. Meanwhile for stuffing chopped celery, apple and rice together. Stuff hens. Put rest of stuffing around hens and cook 20 minutes more until hens are lightly brown.

Glaze: Put 1 can undiluted apple juice in a pan add 2 tablespoons cornstarch and bring to a boil or until juice is slightly thicken.
