RICE TABOUILI SALAD 
1 (6 oz.) box long grain and wild rice (I use UNCLE BEN'S®)
2-3 med. tomatoes, diced
1/2 c. + 1 tbsp. each - diced green pepper, peeled and diced cucumber, sliced and pitted black olives, onion and minced parsley
6 tbsp. olive or vegetable oil
6 tbsp. lemon juice
3 tbsp. minced fresh mint or 3 tsp. dried mint leaves

Prepare rice according to package directions. Place rice in bowl and cool to room temperature. Add remaining ingredients. Chill at least 1 hour. Serves 6- 8.
