CHICKEN AND BROCCOLI CASSEROLE 
1 cooked chicken, boned & cut up
1 head fresh broccoli, cooked & drained
1 can cream of chicken soup
1 can cream of mushroom soup
2 pkgs. Stove Top stuffing mix (chicken flavored)
1 pkg. cheddar cheese, grated (about 2 c.)

Lightly grease the bottom of 8"x13" pan (I use Pam spray). Put cooked broccoli in the bottom and on top of that place your cooked chicken. Take the cream of chicken and mushroom soup and blend together, place these over the chicken. Mix together the 2 packages of Stove Top stuffing according to package directions and spread over the mixture.

Bake for 30 minutes at 350 degrees. Sprinkle with the cheddar cheese and return to oven until the cheese has melted. (This is a bit fussy but can be made ahead of time or put in the freezer.)
