MEXICAN CAKE 
2 c. flour
2 eggs
2 c. sugar
2 tsp. baking soda
8 oz. crushed pineapple
8 oz. chopped walnuts

Mix all ingredients all together; pour in a 9 x 13 inch pan. Bake at 350 degrees for 1 hour. Cool and frost with Cream Cheese Icing.

CREAM CHEESE ICING:

1 stick butter
8 oz. cream cheese
2 c. 10x sugar
1 tsp. vanilla

Beat cream cheese and butter together until creamy; add 10x sugar and vanilla. Mix until spreadable.
