RED BEANS AND BROWN RICE 
1 c. brown rice
4 slices bacon, cut in 1 inch pieces
1 tbsp. flour
Pepper
1 can kidney beans
1/2 tsp. salt
Dash Tabasco sauce
1/2 med. onion, chopped
1 tbsp. chopped parsley
1/4 tsp. chili powder
1/2 tsp. minced garlic

Cook rice normally. Fry bacon and onion together, remove from pan and blend flour into drippings. Cook over low heat stirring constantly, until flour is lightly browned.

Add juice from beans and enough water to make 1 cup liquid. Cook until slightly thickened, add beans, bacon and onion plus seasonings. Simmer at least ten minutes to blend flavors. Serve over cooked rice. Serves 6+.
